Well, for one thing, they're enormous and pews would cost a fortune. Since the cathedrals are put to a lot of different uses, they'd get in the way, as well. Actually pews are a relatively new invention. It's only a hundred years or so since people became too proud to kneel on the floor.
After rebuilding, from the 1920 fire, was completed, but before the new pews and altars were installed.
